Celery juice: Liquid vegetables for a balanced diet
Vegetable juice is trendy, and especially around the term “detox”, a juice cure is propagated. Celery juice is said not only to have a detoxifying effect, but also some beneficial effects. I’ll clarify what’s right.
The benefits of drinking celery juice
There is no doubt that celery is healthy. Like any vegetable, the tubers or stalks contribute to a balanced diet and a fresh celery salad can often be on the menu. How to make celery juice yourself
For a celery juice, wash and clean the stalks, chop them up and place in a juicer. You can also process the vegetables with a little water in the mixer and then strain the mixture through a cloth. You can use the leaves when you prepare celery. However, they intensify the slightly bitter taste of the vegetables. For a delicious celery smoothie recipe, in addition to the freshest perennials possible, fruits such as apple, pineapple, pears and oranges are recommended. Mint, ginger and herbs round off the taste as desired.

Ingredients for 6 servings
For the brioche:
100 ml milk
100 ml water, warm
25 g yeast, fresh
35 g of sugar
8 g of salt
80 g butter, soft
For the salad:
300 g fennel
300 g celery
2 apple, solid variety e.g. Elstar
50 g walnuts
150 g crème fraîche
1 tablespoon of sugar
1/2 teaspoon cumin
Half a teaspoon coriander seeds
1/2 pod of chili
1 teaspoon oil, for frying
Preparation of the celery salad
1- Wash the celery and fennel.
2- Cut the fennel and celery into fine strips. Slice the apple into strips and put everything in a bowl. A Julienne cutter is suitable, but not mandatory, for particularly thin slices.
3- Peel an orange, remove the fillets and add to the bowl. Squeeze the rest of the orange over the salad.
4- Season the creme fraiche with salt, pepper, sugar and cumin and the coriander seeds and then stir in.
5- Dice half a chili pepper and add to taste.
6- Roughly dice the walnuts and briefly toast them in hot oil until golden brown.
7- Drain briefly on kitchen paper and then garnish on the salad.
8- Dissolve the yeast in the lukewarm water together with the sugar, butter and milk. Knead into a smooth dough with the egg and flour.
9- Cover the dough in the bowl and let rise in a warm place for three quarters of an hour.
10- Now knead the dough again with your hands and divide according to the desired brioche size (approx. 6 rolls), roll into balls and let rise on a baking sheet for another 15 minutes.
11- Bake at 360 degrees Fahrenheit (180 ° Celsius) for about 25 minutes, allow to cool and serve with the salad.
