What Does Sous Vide Cooking Mean?

Sous Vide cooking is a cooking process invented within France in the 1970s. Not many sous-vide devices existed at the time, so they mainly used the sous-vide cookers in the catering industry. In the civic household sector, the devices became popular and renown for its handiness much later.

Sous-vide is french. It basically means “under vacuum” or “cooking in a vacuum”.

Sous Vide Vacuum Sealer

If you want to cook food sous vide, you need a vacuum sealer in addition to a sous vide machine. Because, before cooking, you have to fill the food in plastic bags. Then, you will weld the bags. After that, it is possible to put the filled bags into the sous-vide water basin.

The one in the link below is a trusted Austrian company offering great value, including a starter kit, to affordable prices. They do have wonderful reviews, too. At home, we use Müeller products for many years with great satisfaction – otherwise, I wouldn’t recommend it to you.

In the water bath, the food cooks at low temperatures. These are often between 122 and 194 degrees Celsius. Partially cook the food in a water bath for several hours or days. You can use various foods in the sous vide process, however, this mainly includes meat, fish and vegetables.

The Pros And Cons Of The Sous Vide Method

Now we are dealing with the positive as well as the negative characteristics of the sous-vide cooker. Let me present to you the advantages and disadvantages of these devices and the cooking method below and in more detail.

1. Your food, sealed in a bag, cooks in its own juice; thus, staying tender and moist. Because of this, furthermore, your meals receive a more intense taste.
2. At the same time, the food within the plastic bag does not dilute.
3. Through the sous vide cooking method, foods lose less nutrients and vitamins.
4. While the food is cooking in the sous vide, you can do other activities.
5. Most devices have a timer, which informs you when the cooking time is over.
6. Sous-vide devices are ideal for preparing different dishes.
7. Foods can be frozen after cooking or stored in a refrigerator. Before serving, you just have to warm them up.

1. There are bacteria on the surface of, for example, pork and poultry. Since you use only low temperatures during vacuum cooking, the bacteria might not always be completely killed.
2. Often the foods need to cook for a long time in sous vide cooking.
3. In addition to a sous vide device, you require a vacuum sealer and plastic bags.

What Is Important When Buying a Sous-Vide-Cooker/Stick?

Attention: I want you to know that if you are looking for a model that is best suited for you as the best sous-vide-cooker, you should examine the individual devices with regard to various factors. In my comparison, I show you below ten relevant purchase criteria for sous-vide-cookers:

The performance: Sous-Vide-cookers with water tanks often have a capacity of about 500 watts. This is usually enough for your private use in your kitchen at home.

If you prefer a device with a larger capacity, then a sous-vide-stick could be for you. They are equipped with a higher performance than the complete devices. The power of the sticks is often between 850 watts and over 1.000 watts.

The material: Many sous vide cookers are made of stainless steel or plastic. Plastic devices are usually easier to clean and often have a lower purchase price. Some of these models are available in different colors.

Stainless steel sous vide machines score with their high stability. In addition, they are usually optically of high-quality and noble. It is also positive that the stainless steel models allow longer heat storage and are usually dishwasher safe.

The capacity

If you are interested in a tank device, it makes sense to look at the capacity of the interior. For households of one to two people, the sous vide cooker with a capacity between 2.5 and 4 liters is sufficient.

If you want to cook for up to four people, it is worth purchasing a device with a capacity of at least 6 liters. If you have a large family or often cook for more than four people, large sous vide cooker with a capacity of at least 8 to 9 liters is suitable for you.

Should you prefer the sous vide stick, it is best to look at the container for which the model is designed before you buy it. Many models are suitable for containers with a capacity of up to 20 or 30 liters.

The temperature range

Many sous vide devices have a minimum temperature between 104 and 122 degrees Fahrenheit and a maximum temperature between 194 and 210 degrees Fahrenheit. Some models are equipped with a lower minimum temperature of 77 degrees Fahrenheit, too.

Sous-Vide Cooker Test (The temperature accuracy)

The temperature accuracy indicates how precisely you can set the temperature. Some models have a temperature accuracy of +/- 34 degrees Fahrenheit. With these devices, you can adjust the temperature in 34 degrees increments.

More accurate sous vide cookers offer a temperature accuracy of +/-33 degrees Fahrenheit. If you want to set the temperature extremely precisely, you should look for a device with the above feature.

The timer

Most sous vide devices have a timer. This triggers an acoustic alarm as soon as the cooking process finishes. When purchasing, check the possible intervals that the timer offers. Many models allow you to set the timer at 10-minute intervals.

The maximum cooking time

The maximum cooking time shows how long the sous vide cooker can cook food without a break. Most models have a maximum cooking time of at least 24 hours. In some cases, the sous-vide cooker offers a maximum cooking time of 60 hours or more. Quite often a device even has a maximum cooking time of almost 100 hours.

The display

Usually, Sous Vide cookers come equipped with an LCD or LED display. Many displays show the remaining cooking time as well as the current one, plus the selected temperature. Some devices are equipped with a touch display. For other models, you must set the temperature and cooking time using various buttons and /or dial.

The minimum height

If you are looking for a sous vide stick, you should check before buying, which pots are suitable for the stick. Most manufacturers specify the minimum height of the tanks. Sometimes a 4-inch high pot is enough. Partly a taller item is necessary.

The circulation pump

A circulating pump moves the water around. Thus, it ensures that the water throughout the container is evenly warm. Sous vide sticks usually provide a circulation pump.

However, some sous vide appliances with water basins also have a circulation pump. Bear in mind that a sous vide cooker with a circulation pump is usually louder than a device without a circulating pump.
