To make almond milk even more enticing to you, I have decided to share five of my favorite almond milk recipes with you.

Of course, I will first and foremost show you how you can prepare your very own almond milk. That way, you know with certainty what you and your loved ones are consuming.

Preparing your homemade almond likes a breeze, and once you’ve tried it, I’m sure you will not want to miss it ever again in your diet.

So, are you ready to get started? Alright then, let’s dive right into our almond milk heaven.

Almond Milk Recipe: Basic Recipe for Fresh Homemade Almond Milk

All you need to make fresh almond milk is almonds, high-quality water (such as filtered tap water), a high-performance blender, and a nut milk bag or cotton cloth. The latter, you need to remove the almond flour from the almond milk.

Since not everyone has a nut milk bag at home, I want to explain the filter process with a cotton cloth, too. If you would like to prepare fresh almond milk on a regular basis, however, I advise you to buy a nut milk sachet because the cotton cloth is sometimes torn or permeable.

You can use the almond flour well for baking – e.g. for muffins, pancakes or even raw food crackers. Simply dry the almond flour, and then use it for your favorite recipe. As a high-performance mixer, I used the Vitamix Professional Series 750 and was thrilled how well it blended the fresh almond milk.

Generally, we use a mixing ratio of 1: 4 in our recipes.

That means 125 g of almonds are processed with 500 ml of water. You can buy the almonds unpeeled or peeled. The difference is noticeable in the price and taste.

Peeled almonds are significantly more expensive, but they taste a little less bitter. I use an unpeeled variety because, at home, we prefer unprocessed almonds.

Since they are soaked overnight, you can, of course, also peel them yourself. This takes, however, a considerable amount of time.

Note: Here, I want to add that some people do not drain off the soaking water from their almonds, but they use it together with the remaining ingredients in the blender, instead.

I know this makes the almond milk drinkable for the next 3-4 days if kept in the refrigerator. I, for a specific reason, favor to pour it out. I’m very health-oriented and try to keep risks of food poisoning as low as possible, too.

I’m not indicating that the people who use the almond water shouldn’t do so, all I’m pointing out that I don’t utilize it because of the slight risk of food poisoning.

I am aware of the fact that hydrocyanic acid is only present in bitter almonds. However, one cannot be careful enough, in my humble opinion, and that’s why I prefer to disregard the soaking water.

Of course, you are free to use it within your recipes, but, please, keep in mind that I mentioned the risk. I am here to help you reclaim your life and happiness, so the last thing I want you to become is sick. Now, that I got that off of my chest, let’s get to the fun and delicious part of my post.

500 ml of water
125 g almonds unpeeled

Instructions

Soak the almonds overnight for about 12 hours in a bowl of water. The soaking neutralizes the enzyme inhibitors contained in almonds (phytic acid) and makes them easier to digest.

Drain the soaking water the next morning and rinse the almonds well.
Add almonds and water to the blender jar and mix at the highest level until a uniform liquid is obtained without pieces.

Then pour the milk through a dish or cotton cloth to remove the almond flour. Spread the cloth on a sieve over a bowl and pour in the milk.

Now take the cloth ends together and wring the milk through the cloth. The fresh, pure almond milk is ready.

Optional

For our basic recipe, we sweeten the fresh almond milk with pitted dates and flavor it with cinnamon and vanilla. A pinch of sea salt provides that certain something.

For this, we put the filtered milk with the spices and dates into the blender again and purée once more for about 1 minute until all the ingredients are well mixed. If the mixing takes longer, the almond milk can warm up slightly.

This can be very pleasant in winter. But if you want to enjoy it cold, just add a few ice cubes while mixing. Voila, you finished your delicious almond milk that tastes of cinnamon and vanilla.

Tips & Tricks

Foaming: It is normal while blending to form a foam, especially in a second mixing session. You can use this almond foam, for example, in an espresso macchiato or a small cappuccino.

Shelf life: If you do not drink the almond milk immediately after preparation, keep it in the refrigerator. It is palatable for about 24 hours. Unlike some sources state, I can not confirm any information that the shelf life is between 2-4 days!

Shake well before consumption: Since the almond milk settles very quickly, shake it well before drinking.

Other Nut Milk Variants: As easy as you can produce almond milk yourself, it is easy to make any other nut milk using the same procedure. Hazelnut milk, for instance, also tastes delicious.

No high-performance mixer: If you do not have a high-performance mixer, you can also try the recipes with almond paste. To create an almond paste simply blend a mixture of 500 ml of water with about 2 tablespoons of almond flour.

Wash blueberries and remove stalks if necessary.

Pit the Medjool dates, slice the vanilla bean lengthwise with a knife and remove the vanilla pulp.

Put all the ingredients with the fresh almond milk in the blender jar. Purée at the highest stage until an even milk is produced.

Almond milk provides the perfect base for a healthy version of the chai latte. In addition to the typical chai spices such as cardamom, cinnamon and star anise, I have added fresh orange to the almond milk.

When the almond milk warms up during the second mix session, it fits well as a drink during the orange chai-time.
